Best trees to windbreak a paddock or pasture??

OK, so I generally know not black walnut etc and I have the 'recommended' species for functionality, but looking for input on appearance and experience. We have a lot of road exposure we need to plant for, most likley 2 level or 3 level and I would like it medium to high prevention but also some 'attractiveness'
horses most likely won't be able to reach, except perhaps the '3rd row' as it gets older

opinions?

suggestions?

I like cedar or other evergreen (spruce, pine etc) Leaves/protection all year.

I second that and they grow faster than hardwoods too.

Just letting you know what happened to work at one place I was at:
Poplar at the outside row. Grew fast, sounded fabulous in the wind provided a wee bit of fast windbreak and looked nice. 10 feet inside that, a row of evergreens about 5 feet tall( a spruce variety)
By the time the poplars were tall, spindly and dying, the evergreens were 15 feet or more providing an excellent wind (and privacy) break, looked great. It was easy to cut down the poplars when they were spent.

You probably know doublel but stay away from maples too especially Red Maples - the fallen, crumpled leaves are very toxic. Silver and Norway etc. are suspected to have some toxicity - but not proven (for some reason) as for the Reds.

thanks for your input, I've got a meeting with the GRCA on Monday, evidently they will give you a suggested site plan and pricing for free if you are going to plant 30 saplings/300 sprouts or more :)
